Persian Radish Salad

 

This salad is inspired by a Persian appetizer where all of these ingredients are served in piles which you then pile onto Nan bread at the table. So delicious, but also good as a side salad. Radishes plus salt make things taste amazing!

 

2 cups chopped red radishes

1 ½ cups walnut pieces, not too finely chopped

1 bunch of scallions chopped, whites and greens

Ricotta salata, preferably from Swallowtail Farm at Portland Farmers’ Market

handful of tarragon leaves

bigger handful of mint leaves

¼ cup olive oil (or even walnut oil if you have it!)

Generous amount of Salt and Pepper

 

Chop everything up and mix it. Add more salt if necessary. You can also substitute chopped basil for the tarragon and mint. Also delicious.
